My haus mann does a beautiful red onion and shiitake mushroom reduction - add thyme, vegan Worcester sauce (maybe teriyaki/miso paste if you don’t have it). Bit of cornflour to thicken, little bit of tomato paste... red wine if you drink alcohol. Please don’t add tea
