Also, watching them at the restaurant getting drunk then coming back and Carrie trying to drunkenly seduce him.

This interview goes some way towards explaining the discontinuity in the episodes. It’s not just that the scenes with Big have been cut, but also the Stanford ones. Apparently he was in every episode. Why cut him? (Edit: maybe he was just scripted to be in all of the scenes.)
