If I had a glut of tomatoes, and I have in the past when I grew them, then I would pick them when they are still green. You can then hide them away, I put mine in drawers, and then they will slowly ripen over the weeks. You can also us the large green ones to make fried green tomatoes to have with toast and eggs.
