Someone with more knowledge of this can probably correct me here but might her constant cackling at things be a symptom of her supposed autism diagnosis? If she struggles with social interactions but she thinks that happy = laughing then she may be laughing to try and convey that she's happy.
She laughs at the alpacas when they're just standing in the garden, she laughed at Ron the other day when he was sitting writing his Christmas cards, I know we have picked up on it before but it just seems really weird.

Think the fake laugh is more because that is how she thinks she should be reacting to show she's in the moment and is giving a tit, when really she's probably thinking hurry up, get the footage so she can go and sit in the chicken shed on her own, her real happy place where no one bothers her and she doesn't have to lift a finger looking after her children.
Or, you could be right. Autism. Conveniently

If you watch it carefully, she moves to stand in front of the cow and kind of flips her hair around and places it in front of said cow…almost like she was encouraging it to eat it I’ve always said that wasn’t spontaneous, she knew what would happen and stood hoping she would go viral.

I had never heard of her, just watched her lastest vid and wow, what an amazing woman! Bought a tear to my eye. Could you imagine Hinch doing one of those deep cleans?! Could you duck, she would be screaming like she did when the cow went for her rat tails.
