Do you have a recipe for the chilled cucumber soup? Can't imagine what that is like at all but I am intrigued.

Sure, here is the basic recipe but you can tweak it to your liking. I sometimes omit the onions or use kefir instead of yogurt.

We had a tray bake- chicken drumsticks, potatoes and parsnips, alongside some roasted cauliflower. All very easy but filling and liked by all. Always a winner!
