@Iolair Carrot cake recipe
Sorry it's only in imperial rather than metric.
14oz caster sugar
4 Eggs
14fl Oz sunflower oil
14oz grated carrots
1 teaspoon each. Mixed spice, salt and vanilla
14oz self raising flour
Whisk... oil, sugar and eggs until thick and pale.
Mix in flour, spice and salt
Stir in carrots and vanilla.
This recipe makes two 2lb loaves or could be done in sandwich tin.
Bake at 170 oC for 1 hour.
Cool and ice.
Beat together.
1oz butter (room temp)
3oz Philidelphia
Juice and zest of quarter lemon
6oz icing sugar
This is half what Avoca recipe says for the icing as I think it's too much otherwise. ⁵
