Bank holidays are only given for senior royals. We didn't have one for Eugene, Andrew and Sophie, Anne and either of her husbands or Andrew and Fergie (if memory serves!). Wills and Kate had one, as did Charles and Diana because the men are in direct royal succession, not because it was a royal wedding.
The Queen's own wedding was on a Saturday. If it's a tradition, it's hardly set in stone and I found nothing on line citing this tradition - perhaps you could link something I've missed?
As for the location, that's something we'll never know though it's well documented Liz adores Windsor and their courtship () occured there, so I could imagine her being sycophantic enough to hold it there for those reasons alone. Again - we'll never know but Westminster and St Pauls are usually senior royals only as other weddings prove. (I think Andrew and Fergie and Anne's first marriage were at Westminster, but William and Harry weren't born for those so they were higher up the line of succession).
Yep agree - didn't mention privacy of the venue or otherwise. And doesn't she know Windsor is Liz's weekend home? She's not going to give it up.
May have been mentioned as I’m catching up but I think I’ve read that Harry and Meg practically stole Eugenies wedding - date, location etc. It was rushed through. This would back up the Saturday and non central
London location theory too?
