I don't think I've ever had red velvet cake ....

It's not actually very nice. The sponge is a basic chocolate one that's got too much food colouring in, and the cream cheese frosting is generally far too sweet, and there is far too much of it in comparison to the sponge. I find a 50:50 ratio of sponge to icing very unpleasant, there should be more sponge than frosting, and perhaps some jam or fruit in the cake to provide texture and interest.
